Communicative Coffee Grinders

Technical innovations on the subject of coffee grinding are the theme of MAHLKÖNIG GmbH & Co KG at the host in Milan from 21 - 25 October.

At this year’s host, the world’s largest trade fair for coffee and coffee technology, MAHLKÖNIG is presenting new and further developments for its popular gastronomy grinder K30 and the semi-professional models VARIO home and ProM.

Intelligent Communication. The RFID version (RFID= Radio Frequency Identificationof the popular K30 espresso grinder has been developed for the specific requirements of specialty coffee roasters and, above all, coffee bars. This technology enables a data exchange between the beans` reservoir and the grinder, meaning that control and recording functions are possible way above the counting and logging of portions ground per day. Via a quantity indicator it is possible to measure the remaining capacity and the portions that are possible. A signal warns in good time if the coffee supply is running low. These are only a few of the functions that are possible in this unique unified information system. In addition, there is also a new RFID version which functions via a smart card and is interesting, above all, for roasters who fund an espresso machine for their clients. With the RFID smart card you can ensure that the grinder genuinely only grinds the amount of coffee delivered and is blocked for additional “external grinding”. The smart card is loaded with a pre-defined grinding length (in seconds) – similar to a pay card – and is delivered to the client by the coffee roaster along with the coffee. The appliance is activated with the loaded-up smart card by holding the card against the transmitter or the grinder’s antenna. The credit balance is loaded from the card onto the grinder and the grinder is unlocked to grind, for example, 1 kg of coffee.

After the pre-defined grinding time required for 1 kg of coffee beans, for example, the grinder is blocked and only grinds again if it is activated with a new smart card.

Specialists. MAHLKÖNIG is also keeping up with the growing trend of filter coffee preparation in the gastronomy industry with a further version of the popular VARIO home. With this we don’t mean the classical filter machine methods, but the elaborate and professional filter coffee preparation using a French Press, aero-press or “Karlsbader Kanne” in so-called "brew bars". The new VARIO-W is designed exclusively for grinding filter coffee and therefore does not grind for a pre-defined time but according to weight. Highly sensitive scales which measure the coffee powder to the exact gram are fixed under the ground coffee container. This means that the amount of coffee, which is ground, can always be reproduced exactly. The grinding degree can be set infinitely variably and very finely via two slide controls.

The new ProM Espresso, a further development of the ProM all-round grinder, represents the antithesis of filter coffee grinding. It has a large hopper which takes at least 600g espresso beans. For easy dosage of double or single shots, the new display has been provided with a touch screen. To use more than one variety of espresso, the hopper can be closed by using the hopper slide and replaced. There is a video in English describing how RFID Technology functions, as well as the ProM Espresso and VARIO-W at  http://vimeo.com/25808154

Limited Special Edition of MAHLKÖNIG K30 Grinder for the WBC in Bogotá

The third year in a row MAHLKÖNIG supports the World Barista Championship as official grinder sponsor.

As the World Barista Championship takes place in Columbia this year, for the first time ever a coffee producing country acts as host of this competition. MAHLKÖNIG backs up the WBC 2011 in Bogotá as official grinder sponsor.

From June 2nd – 5th the best baristas are going to meet in the Colombian capital of Bogotá, in order to elect the world`s best barista during a three-day contest. To a great extent this event is funded by suppliers of the coffee business, who act as sponsors and thus provide their financial and technical support.
The competition is organized by the newly founded WCE (World Coffee Events) Organisation, which holds the marketing rights of all coffee related championships.

MAHLKÖNIG as official grinder sponsor of the WBC not only makes the K30-Espresso grinders available for the competition but also equips the preparation area, the coffee bar zone and special areas around the competition stage with various professional Espresso grinders.

On the occasion of the WBC 2010 in London, MAHLKÖNIG launched a limited special edition of their very successful grinder K30 Vario. Also for the World Barista Championship in Bogotá there is a specially designed model of the K30 Vario in a limited edition. The design of the K30 grinder, kept in white with a green floral decor, is geared to the logo-composition of the WBC 2011.

Apart from their commitment as sponsor and the supply of a great number of grinders for the whole event, also the new World Barista Champion 2011 is going to benefit notably from the dedication of the Hamburg based company to coffee quality, because this years’ WBC winner will get invited to the MAHLKÖNIG headquarters in Hamburg in order to be introduced in detail to the world of grinding.

US-Barista Champions rely on MAHLKÖNIG grinders

From April 27th until May 1st 2011 America`s best baristas will compete again during the US Barista Championship in Houston (Texas). MAHLKÖNIG USA supports this top-class contest again this year as official grinder sponsor.

The US Barista Championship takes place at the “23rd SCAA Exposition and Symposium” in the George R. Brown Convention Center in Houston. 38 regional champions who have qualified during the preliminaries in six different US-regions will then be on the competition stage eager to win the national title. In every single region on average 30 baristas competed against each other. Those who will then participate at the final are real professionals who managed to discard a great number of highly skilled fellow competitors.

During the preliminaries roughly 65% of the Baristas worked with the K30 or K30 Twin from MAHLKÖNIG. For the US Competition in Houston around 20 participants have decided to use Espresso grinders made by MAHLKÖNIG.

The workshops which will be offered during the SCAA-event will be equipped with MAHLKÖNIG grinders as well, like the “Guatemala Lab” for the Cupping- and Roasting workshops or the “K30 Varios” for the Espresso Lab. More than 600 attendees have already registered for the numerous workshops organized by the SCAA.

As in previous years MAHLKÖNIG once more backs up the national competition just as much as the regional preliminaries in the USA as grinder sponsor. MAHLKÖNIG completes this support through their commitment also on an international level by acting as official sponsor of the World Barista Championship (WBC), which will take place from 2nd – 5th June 2011 in Colombia´s capital, Bogota.

Shortly after the WBC the world`s elite of Baristas will meet again at the SCAE World of Coffee 2011 event from June 22nd to 24th  in the Dutch city of Maastricht. There the World Latte Art, Cuptasting, Coffee in Good Spirits, Ibrik / Cezve Championships and Brewers Cup will be run. Here MAHLKÖNIG appears not only as official grinder sponsor of the World Latte Art Championship but also equips various workshops with Espresso- and Shop grinders.

London is calling!

MAHLKÖNIG is the official grinder sponsor of the WBC 2010 and presents its latest innovations in the field of coffee grinding at the associated Caffè Culture Show from 23rd until 25th June 2010.

Only a few days to go until the beginning of the Caffè Culture in London, which is considered to be this year`s most important event of the international coffee industry. Besides the fair with more than 300 exhibitors, the World Barista Championship (WBC) 2010 is taking place as well as the annual conference of the SCAE. More than 10.000 trade and business professionals from all over the world are expected to visit the event.

As the official grinder sponsor of the WBC MAHLKÖNIG not only equips the competition area but also the preparation stations and the bar zone with at least 12 grinders. At the MAHLKÖNIG booth K70 the company shows the official competition grinders especially designed for the WBC 2010 in London, along with a variety of new and approved products developed for precise fresh grinding of coffee. The brand new RFID solution (patent pending) for the K30 grinder should be particulary interesting: a cutting-edge supervision device for the controlled grinding of premium blends with precise check of dosing and grinding degree.
As MAHLKÖNIG attaches utmost importance to the perfect quality in the cup, a special grinder cleaner, called GRINDZ™, was developed. GRINDZ™ is easy to apply and helps to improve both the cleanliness of the grinding discs and the dosing precision for every portion and therefore the overall quality of every single cup of coffee!

The latest highlight in the MAHLKÖNIG portfolio is the ProM, which was recently honoured with the renowned design prize “red dot design award”. The ProM is a grinder of the latest generation, which covers the whole range of fresh grinding from Espresso to French Press. It can be employed in demanding domestic households as well as in the catering trade. The ProM as well as all other grinders exhibited at the Caffè Culture can be tested by visitors on site and thus demonstrate their ability.

Of course, perfect grinding cannot be expected without the adequate commodity – the perfect coffee bean. Apart from supporting professional Baristas, MAHLKÖNIG has been involved in coffee growing in the origin since 2007. Together with Probat and La Marzocco MAHLKÖNIG runs the Songwa coffee farm in Tanzania. The three companies have teamed-up to provide their clients, employees and other actors involved in the coffee industry with the unique service of offering fact-finding tours to Tanzania – an extraordinary chance to study intensely all facets of a coffee farm. Fairgoers have the opportunity to exclusively experience the excellent quality of the Songwa-coffee while visiting the MAHLKÖNIG booth at the Caffè Culture.

Design award for MAHLKÖNIG grinder ProM

For the second time a MAHLKÖNIG grinder has been honoured with the popular red dot design award.

Hamburg – March 30th 2010

Now excellent design is officially confirmed: The MAHLKÖNIG grinder ProM, which was launched in autumn last year by the Hamburg based manufacturer, not only convinces demanding coffee conoisseurs and caterers, but also the expert jury of the renowned red dot design competition. A few days ago the ProM received the award for outstanding design in the category red dot award: product design 2010. All products which were honoured during the competition had to convince an international jury of design experts.

The distinguished design of the ProM Allround grinder was developed by the well-known product designer Carsten Gollnick, who also created the espresso grinder K30 ES for MAHLKÖNIG (red dot design prize in 2005). This grinder marks the beginning of the success story of the MAHLKÖNIG Grind-on-demand espresso grinders as indispensable tools for successful baristas.

The ProM as a professional grinder for the food service industry and the ambitious private coffee connoisseur ads another chapter to this success story. The grinder stands for fresh grinding of espresso in portions straight into the port-a-filter as well as for freshly ground filter coffee – infused either by hand or prepared through French press. With the ProM, MAHLKÖNIG sets again a new milestone in coffee grinding – the expertise of professionals, combined with exclusive and outstanding product design.

Designers and companies from 57 nations with 4,252 products altogether entered the challenge in the category red dot award: product design.
“Due to their brilliant design and innovative approaches these products stand out from the crowd and were therefore able to prove their quality during one of the world`s hardest design contests”, comments the initiator of the red dot design award, design expert Prof. Dr. Peter Zec.

The award ceremony in front of more than 1.000 guests will take place on July 5th 2010 in the Aalto Theater in Essen, Germany. Afterwards the ProM will be on display in a four-week special exhibition in the red dot design museum on the premises of the Zeche Zollverein in Essen.

The red dot design award
The red dot design award, which dates back to the year 1955, today is one of the world`s biggest and most renowned design challenges. It subdivides into the disciplines “red dot award: product design, red dot award: communication design and red dot award: design concept. In 2009 there were more than 12.000 registrations from more than 60 countries in total.

Press release ProM - Technical perfection meets exquisite design

Hamburg, September 25th 2009. Professional functionality and innovative design don`t have to be mutually exclusive. This is proved by the exciting new ProM coffee grinder from MAHLKÖNIG. The concept for the ProM evolved from the synthesis of the demanding professional’s requirement for precise fresh grinding and the critical consumer’s desire for functionality and design. This clearly defines the field of application for this new grinder in the professional coffee industry as well as for private connoisseurs.

The ProM stands for fresh, portion controlled grinding of espresso straight into the port-a-filter, just as it stands for fresh, portion controlled grinding of filter coffee for extraction by your favorite method: stovetop, drip filter, siphon or French press. Professional quality 65mm grinding discs assure a consistent and homogeneous grind portion after portion. Precisely aligned adjusting knobs for both grind fineness and grinding time allow exacting control over the grind setting and dose amount - an absolute must for anyone who demands exquisitely prepared coffee!

For the perfect preparation of espresso, the coffee beans are freshly ground directly into the port-a-filter. The grinding process starts automatically as soon as the port-a-filter is inserted into the port-a-filter holder, allowing hands-free operation, of course, to offer more convenience. Fresh ground coffee for other brewing methods is dispensed directly into a sleek removable storage bin, which when not in use stores seamlessly at the rear of the hopper. The hopper of the ProM has a capacity of 250g.

The surface finish of brushed stainless steel and high-quality matt black plastic fits just as harmoniously in the modern domestic design aesthetic, as it does in the operational areas of the professional coffee industry. The independent, exceptional design, the professional grinding, and the compact style of the ProM meet the requirements of the sophisticated coffee lover at home, as well as the needs of food service businesses that serve between 50 and 150 cups of coffee a day.

Providing customers with a variety of leading-edge coffees is a trend that is becoming more and more important in the coffee industry, which represents an ideal application area for the ProM. Due to the slim design and small footprint, several grinders with various types of coffee can easily be placed next to each other – even in a restricted space. Precise metal adjusting knobs with clearly indicated scales, that are located on the right side of the grinder, enable a simple, head-on handling.

The ProM owes its compact and extraordinary appearance to the industrial designer Carsten Gollnick, who has previously created the K30 Single and K30 Twin espresso grinders for MAHLKÖNIG.

MAHLKÖNIG is setting a milestone in the field of coffee grinding by launching the ProM grinder, which not only sets new technical standards, but also makes a great visual impact – expert grinding knowledge combined with exclusive product design.

ProM - Interview - Innovation needs passion!

Interview with industrial designer Carsten Gollnick about the development of the MAHLKÖNIG ProM.

KaffeeSatz: Was the creation of the ProM a specific challenge for you?

Gollnick: In some ways it was, because the grinder is developed for two different contexts – household and the food service business. On one hand it must fulfill the requirements of the demanding professionals in the hotel and restaurant scene, on the other hand the grinder has to satisfy the private coffee connoisseurs.

KaffeeSatz: How long was the process of development of the design?

Gollnick: The pure creation, which means the time for the drafts, took approx. three to four weeks. The whole process from the first sketch to the prototype took much longer, about one and a half to two years. At the beginning we started with the technical briefing because it is essential to know from the beginning which kind of technology should be used. After the first briefing follows the design phase with the first sketches. These sketches are intensively discussed within our team. In continuation we optimize the sketches and we select two of them to present to the customer. After the selection of one idea the process of technical adaptations is very long. During this process I work very closely with the engineers at MAHLKÖNIG.

KaffeeSatz: You are working for several customers in the household sector, food service and interior design area. What is the special task about designing a coffee grinder?

Gollnick: The ProM is already the third grinder I developed for MAHLKÖNIG. Before I designed as well the grinders K30 ES and K30 TWIN. The special task this time was the target of using it in the small professional environment as well as in demanding private households. The technology is for professionals, the slim design enables the use in kitchens / bars with small space. Very important was also that the grinder can not only grind espresso directly into the port-a-filter but grinds filter coffee or French-Press in the same high quality. Additionally to the espresso preparation Filter coffee or French-Press gains more importance and the different extraction methods are celebrated intensively. Here also the ProM is to prove its strengths!
Very important for the design was the appearance as stand alone design object in the process of preparing coffee and not a design in dependence on espresso machines.

KaffeeSatz: Do you enjoy drinking coffee?

Gollnick: I would not call myself a coffee drinker but rather a coffee freak. At home and in my office I use professional espresso machines with professional grinders. Of course I enjoy my coffee at home but in the office our equipment really has to prove itself with the amount of espresso consumed. Honestly: the professional Barista scene is really special with its requirements. That means if you want to create something for these coffee enthusiasts you have to have one thing apart from profound knowledge, which is  - passion for coffee!
